Identifikasi Cemaran Boraks pada Bakso yang Dijual Di Desa Gonilan, Kartasura, Sukoharjo
Abstract
Knowlege society about food additives as a mixture of food is often confused with hazardous
chemicals so abuse of hazardous chemicals in food occured. Report of Badan Pengawas Obat
dan Makanan (BPOM) in 2011 stated, from 3206 sample of ‘Pangan Jajanan Anak Sekolah’
(PJAS) consisting of noodle, meatball, snacks and ‘kudapan’ showed that 43 (1,34%) samples
contain formaldehyde. This study aims to detect whether there is contamination of formaldehyde
in meatballs sold in the Gonilan, Kartosura, Sukoharjo. The method used in this research is
descriptive observational. The results of contaminant identification of formaldehyde in 10
samples of meatballs in the tested twice showed no color change on water immersion meatballs
to be yellow . 10 samples meatballs were taken from the Gonilan, Kartasura, Sukoharjo tested
twice indicates that no contamination of formaldehyde in the sample meatballs were analyzed by
AOAC (Association of Official Analytical Chemists). Need to do more research on the addition
of other food additives and dosage.
